Perhaps among the best known hot peppers, cayenne belongs to the genus Capsicum annuum. The name Cayenne derives from the French Guiana district where a tribe of Indians, the Tupi, have been cultivating this variety for generations. This chili was imported into the United States of America around 1827.

The variety grown at La Casetta is the “Long Cayenne” or Long Cayenne, which produces fruits 15/20 cm and more long, tapered and often curved. When fully ripe they take on an intense red color. The spicy level is around 50,000 degrees Scoville.

It is used all over the world for its strong pepper scent and its moderate but persistent hotness. Very easy drying is used to produce the hot pepper powder: Paprika.Golden cayenne

The “Golden Cayenne” or yellow Cayenne variant is also cultivated, a plant with a fairly contained development that produces fruit about ten centimetres long and yellow when fully ripe. The spicy level fluctuates around 80,000 degrees Scoville.
